Poached egg on avocado bread

ingredients for poached egg avocado bread

INGREDIENTS

slice of sourdough bread 

1 avocado

2 cherry tomatoes

pinch of salt 

pinch of black pepper

pinch of crushed chillies  

1/2 a spring onion  

lemon juice 

1 egg 

water 

METHOD 

Step 1 

In a small bowl, scoop out the flesh of the avocado into a bowl. Then combine the avocado, chopped cherry tomatoes, lemon juice, salt, and crushed chillies and black pepper. Gently mash with the back of a fork

Step 2

Spread the bread with the mashed avocado mixture

Step 3 

Fill a pan 3/4 way with water add a pinch of salt and bring to a boil 

Turn the heat down and bring the water to a light simmer

Step 4 

Crack an egg into a ladle then gently pour into the simmering water with a swift fluid movement 

Step 5

Cook egg until done (should take 2/3mins – should be runny on the inside )

Step 6

Place cooked egg on top of the avocado toast – sprinkle black pepper salt
